Are you sure she can't find someone that makes enough money to be a joint sponsor. It can be anyone over 21 (maybe 18) that is a US citizen or legal permanent resident. Maybe she has a friend that make a good salary and she just has to push hard to get that person to agree.

I will start this post with the words I THINK - I'm sure if I'm wrong someone will correct me.
I think that if she wants to include income from the things "she makes and sells", she needs to show that income on a tax return and have declared the income offically (and paid tax if applicable). If she has not, then the income can't be used.

I'm sorry if something similar to what I'm about to post has already been posted. I scrolled through a few threads that i thought were similar but they weren't.
I've met an American girl who I am deeply in love with, she also loves me. We've been dating each other for just over a year now, but we are confident we are "the one". I'm from the UK, so we have been in long distant relationship. We have both discussed marriage and are ready to get married.
I have to move there, she cannot move here since she has children. The problem is, for me to move there she needs to sponsor me. She needs to show that she earns $25000 per annum. She doesn't earn this much, not even close.
I've done some research and found that someone could co-sponsor, she doesn't know anyone that has this amount of money. Another option is i could show that i earn $25000 worth of income per annum. Again, i don't earn this kind of money either.
We are very in love and have been the happiest we have ever been. At the beginning we had no idea it would be hard for a UK citizen to move to the USA. We thought it would be hard for those living in third world countries, where sham marriages are more likely to occur for the sake of a green card.
What options do we have?

With the monetary difficulties and her having three children this does not seem likely?
If the above assumption is correct, would it not be sensible for you to visit her in the US first?

Regarding the "get a better paid job", that won't do you any good unless you can save up enough money to show the ConOff you won't become a public charge in the USA (instead of your fiancee submitting an I-134 affidavit of support). There is no dollar figure associated with the I-134, so if you have "enough" in savings, perhaps it will convince the ConOff.
Even if that's the case, once you're in the USA and doing AOS, your spouse still needs to submit an I-864, and unless you have enough in savings ($103,386 by the looks of it), you'll still need a Joint Sponsor at that time anyway.

$34,462 is the amount of annual income required to adjust status. For the K-1 visa the annual income requirement is $25,570.

You have given no indication of having met this person in any of your posts, so first of all, you should save for a vacation in the US so that you can meet her. It is an essential if you are to move ahead with your plans. In your first post you said you are a recent graduate. In what? Can you think in terms of getting a good job with a company that has a US presence with the hope of eventually getting transferred over there? That would give you the opportunity to give yourself a financial footing in the US, be on the same continent as your girlfriend in order to see if the relationship will prosper, and take it from there . . . From a financial aspect, the more money you (or she) can save up, the better. Besides having to meet USCIS financial requirements for the Affidavit(s) of Support, you will need real-life money to live on from day to day. If you arrive on a K-1 visa, it will be some time until you are legally able to work (60 - 90 days after filing AOS), so you'll need savings to live on in the meantime.
If it comes down to the wire, and you have some money to live on, but not enough to meet the affidavit of support requirements, I suggest getting a sponsor (other than your fiancee) for the I-134, and a Joint Sponsor for the I-864.

Since you ask, I advise you to move slowly and carefully. You are about to take a course of action that could ruin you financially. You say you aren't materialistic, and that's quite sweet... however, it's incredibly naive where US immigration is concerned. How will you live day to day? She's looking after a disabled child on a full-time basis, and you have no skills to remark on. You won't have a job when you arrive in the US, and you're not likely to have a job for perhaps 4-6 months after arriving... and that'll depend on the economic climate of whatever town you're living in. Despite what you may have heard, you can't live on love - indeed, from the US government's point of view, love doesn't ever enter the immigration equation... it's irrelevant.
I don't mean to be rude or impertinant with these next questions (and you're free to not answer if you don't want to), but where do the other two children go during the week when she doesn't have them... and why doesn't she have them?
