A glass of Rioja. And then, I'd had to open a bottle of port in order to get a glass for the sauce, so naturally...

Gout ahoy!

No, it sounds lovely.

I've always liked a bit of horseradish sauce and then I discovered a mix of horseradish and mustard. But there's a brand here of "creamy horseradish sauce" and with a nice roast beef it's better than to die for.

With the quantity I assume would be needed it would be way too expensive to use that, but a cheaper pot mixed with a bit of cream maybe?

Mixed with a potato topping for something perhaps. Fish pie?

For lazy curry lovers, my mother in law bought this for me in Walmart.

I think I may have a new favourite

I confess it was a bit too hot for me but a dollop of Cream of mushroom soup reduced the power nicely.

Cream of mushroom soup is dead handy for such occasions.

Did I just hear a collective sharp intake of breath?

Sometimes you cook something you've done many times before but for some odd reason it becomes perfection.

Like coffee...same water, same amount of coffee, sweetener/sugar, milk/cream if you have it...suddenly you just get one that's heavenly.

It happened tonight with a gorgeous rib roast. Just wonderful.

Even the sweet red wine that my mother in law likes was nice - only for one glass though.

My PC pot of creamy horseradish is empty and needs replacing for next time. Remind me.

Never again.
It took years before I managed to make a good roast beef. The overall taste was always there with the gravy, roast spuds etc but the meat was often too chewy.

Then one day I made a superb one with a boneless cross rib - high temp to begin and then lowered. But only once.

I do premium prime rib roast (or whatever they call it) and tenderloin and both of them are really very good every single time.

Today I tried a bcrr again. We bought it some months ago because it looked like it would roast well.

It didn't. Tough as old boots. As before, the overall effect was good.

Hopefully it'll make better sandwiches if cut small enough.

Having enjoyed our Lamb Shanks so much a few weeks ago we decided they were special enough to have them for Christmas Dinner so we had Turkey today, instead, with all the trimmings including my "say it myself" cranberry and orange sausage-meat stuffing.
Bootiful.

Cold turkey/boxing day dinner tomorrow.

It was only a small turkey - one of Walmart's $10 ones. 4.2kg - but it did the Sunday roast, Monday's cold turkey and mash and a few extras followed by Turkey/Bacon sandwiches and sweet potato fries tonight. Four of us each time.

Enough left for other sandwiches, curry, whatever.

Turkey chili. I was going to make something sort of Italian with turkey breast and make a juvenile breast reference and call it Turkey Sophia Loren, but the herbs spoke to me and it's Chili Charo.
