My former job in the Army. A medical discharge put paid to it which, looking back, was great as I was able to retrain at a relatively young age. I wouldn't want to be doing so after 22 years in. But I had little day to day politics/bullshit. Was given an objective and how I/my troop carried it out was, for the most part, down to us.

Rail Road engineer, I loved trains as a kid (still do) and it would be the job I would choose if I could have any job.
Of the jobs I have had, the one I wish I could go back to was working for an airline, I just haven't found a way back into the industry, was laid off in 2004 and the moved to Canada where finding one was difficult. (I held various airport jobs with the airline, never a pilot though, no interest in flying the planes.)

What i would really really love to do, is fly a Euro Fighter!!! We went to the Waddington Airshow and i think i was the only person in the place that got really excited (read, pee my pants excited) when it went up! Not something one can do an evening course in though! 
Did consider Hairdressing but have not got the creative ability or inclination for small talk!
I love psychology so am thinking of doing that, just for my own interest.
My current job is dull - hence why i am online at 10am!

I would want 12 jobs
MD of 12 different companies , all high paying all giving me 1 months holiday a year , and each companies has to honours the others holidays !

i'd like to be a painter and decorator or a furniture restorer but get paid load of money or a carpenter and be able to make all that fancy carved wood like the elves live in, in lord of the rings ... or keannu reeves sex slave also i would like to, if i had enough money open a home and adopt old boxer dogs to live out their last years in comfort, or jonathon rhys meyers sex slave
