I'd bought a small "dark" fruit cake from Safeway. It had marzipan or almond paste, (is there a difference? ... better google THAT next), on the top but no sugar icing apart from that. I made some great Royal Icing using egg white, a little cream of tartar, and a lot of icing sugar. I didn't bother trying to smooth it but left it "in peaks" as my mum used to do. I made FAR too much for my small cake, so I took the remaing icing and added more icing sugar until it was thick enough to roll into balls about (2cm diam), then cooked them in the microwave (5-6 at a time on baking parchment) and made M/Wave meringues. The fam still don't go much for the cake but they love the meringues! :thumbsup: |

I made ours in November and have been pouring brandy on it every few days since. Well until it got iced; which took 1Kg of icing sugar. It is quite a large cake considering there are only two of us. I have terrible memories of Christmas cake. I got violently ill one year when I was little and I can't even look at them now. |

Reminded me of last Christmas when the in laws gave us a very alcoholic Christmas Cake, big enough to feed a small country. Great...only problem we were due to fly out six days later and only hubby eats it. The packers enjoyed it:rofl: |

Nom nom...love Christmas cake, particularly my Mums 'special' (aka brandy-fed for 2 months) effort.
And bless her, she doesn't want us to miss out for our first year in Canada so much so that she's just posted us one (along with other assorted holiday knick-knacks) at a cost of £34 via Parcel Farce apparently. Eek, that is some motherly love. :blink: |
