It is actually a fruit called pacae pronounced pah-ka-ay

Here is a photo of the inside. The stuff that looks like cotton, is the fruit and quite sweet. You just pluck some out and eat it. The big dark seed are hard as a rock. Looks disgusting, but so good.

Looks like a thing I've had from Puerto Rico called a guama.

Pretty much the same thing. Seeds are a different color and the pod shaped a bit differently, but the same white fruit inside. Did you like it?

Bit of a weird texture. Sort of starchy like a bean, only not.

These are actually quite sweet, very moist. The taste almost reminds me a bit of watermelon, but not exactly. I've been discovering a lot of different fruits here. Bought one today, no clue what it is and can't remember the name she told me. I'll crack that open tomorrow.

Maybe I didn't get a good one. I have trouble with the starchy things from that neck of the woods. Yucca, for example, is almost inedible.

You might have gotten one not quite ripe. The taste could be different to these as well. Fried yucca is pretty good if it is done right.
