I was just imagining its uses - spraying onto a celery groove might be handy but what if you miss and spray the cat?

I'll pass, though. I don't like the whiz version anyway. I may have used a little once when I ran out of proper cheese for a sauce.

Spraying it on celery would sort of defeat the purpose of eating celery in the first place though. Usually I spray it on a cracker of some variety if and when I have a can lying around.

Thanks for the link, explains it enough for me.

No, this wasn't to be for a fondue, more a slightly different take on a tartiflette, but swapping out the reblochon for other cheeses. It works also with the pasta and potato version aka Alpen Magroni, although that might just be its stage name.

With fondue one has to be careful with emmental imo, too much (and/or too young) results in the 'string' effect, best avoided by using 50% Gruyère and 50% Vacherin, for the classic moitiè moitiè fondue.

Makes perfect sense to me. As with most real world fluids it shear thins (notable exception being cornstarch which shear thickens) so the act of forcing it through a small orifice makes it temporarily runnier, once it is stationary it thickens up again.
