Usually cut them into approx 2 1/2” portions...depending on thickness and width of the fish.

Wow, that's exactly what another friend of mine does - buys fresh from Costco and portions it themselves. I will try this!

I was really into grilling the salmon on a cedar plank on the grill (outdoor bbq) - the cedar plank smolders and the fish comes out wonderfully cooked. But more recently, I've started just either pan-sautéing or bunging in the oven for 10 minutes at 400F (no foil).

That looks good and I don’t care for fish.

If using the oven I usually prefer the longer, slower method of cooking. 350 for 20/25 mins. Wrapping it in foil stops it from drying out. I used to buy the Red Sockeye Salmon...but hubby prefers the pink from Costco. We will be BBQing it in a month or so.

Never bungee jumped or been sky diving. Gave up on those ideas after I hit my 30s and got more risk averse.

Never flown a jet plane, but have been up on the flight deck of a 747 over Greenland, non staff, way before 9/11, but did fly a Chipmunk for a short while, about 1 hour, with an ex, who was a pilot. Both great experiences.
