Do we have a thread for Instant Pot recipe thread?

Since I don't have one... I'll be using my M-I-L's .. I will be making Vietnamese Pho in it.

Once I do and I perfect it, I will gladly share it

steveq won me an Instant Pot at his company's Christmas party. I am starting to become friends with it. Back in the UK I used my pressure cooker a lot so I have used it for spuds for mash, carrots, a UK style chilli and tonight I did Spanish rice, but halved this recipe:

I did try a mac and cheese recipe, but decided that I much prefer to use a bechamel sauce with cheese (sometimes onion, bacon and tomato too) and cooked pasta added into it, with a quick blast under the grill/boiler to get a tasty topping.

Hehe this is crazy because I was just looking at recipes online for Spanish rice in the instant pot.
I'm planning to start up my YT channel again so if I film any amazing ones ill let yall know.

I'm glad youre starting to like it. Ive seen so many cool recipes. Hope you post some on here too!!

What does an Instant Pot do that a pressure cooker doesn't please?

Fast Tex Mex Chicken Enchiladas

6 Chicken Thighs Seasoned with Taco seasoning
Tortillas
2 Bell Peppers (Red & Yellow)
1 Jar of enchilada sauce
Mozzarella & Cheddar for topping
6-8 Mini (Cherry) Tomatoes for topping (Seasoned with salt, pepper and Garlic)


Place seasoned thighs & (1/3)enchilada sauce in the instant pot for 10-12 mins
then add your sliced bell peppers and cook for another 5 mins.

Char tortillas on stove (or however you cook them) keep them in a kitchen towel that also has a damp paper towel to keep them malleable.

grease your oven pan so the enchiladas don’t stick. Then pour some of Enchilada sauce on the bottom of the pan.

once chicken has cooled slightly fill your tortilla then roll them. Once you’ve filled out your pan pour over enchilada sauce.

top with cheese and cook in oven until cheese is melted then top with tomatoes.

We just got a instapot, a freebie from work...So checking out recipes for that, but any recommendations?

I've managed to not blow up the kitchen with the pressure test and did a honey chicken dish that worked out pretty well
