Wouldn't your vet know something about this?

You'll need a dog passport and the correct vaccines so I presume your vet will know which ones.

and it is not cheap, we just had a guy arrive at work from UK with two dogs, cost him over a grand to get pet passports and all the other stuff sorted to fetch them over. Now if you wanted to know about the other way, I am something of a weathered expert

Go to your vet. Is your dog vacinated against rabies? Incase you wish to take the dog backwards and forwards to the UK, get the vet first to microchip the dog, then vacinate it (important to do it in correct order). Then 4 weeks later have a blood sample taken. Once that comes back positive you can have your dogs passport for pets.
Are you planning to go by road to Sicily? We have never had to show any paperwork for the dog within the mainland of Europe. You could simply get the dog microchipped and then vacinated against rabies. You could always do the blood test later in Italy if you want to take the dog to the UK.
If you fly the dog in I am not sure how fussy they are.

Also worth noting - the dog/cat whatever cannot go back into UK until 6 months and 1 day after the blood test date, so it is not a case of a jab, blood test and then off you go........ and there is the tick and worms to sort out as well, not sure about the process coming into Italy though.
As notathome says - it has got to be done in the correct order, I suffered badly due to the incompetence of two vets:curse:
I have never heard of anyone showing any paperwork whilst driving down here

Yes, Kenny and Moe are right. After the blood test comes back positive you wait six months. After that you must make sure you keep the vacination against rabies up to date, then no further blood tests are required.
As I said this is for re-entering the UK. Also to re-enter the UK you must have the dog/cat de-wormed and de-ticked with a British recognised medication, a minimum of 24 hours and maximum of 48 hours before entering the UK.
Coming by road from the UK you will hardly find a border that even looks at the vacination pass, but get the animal microchipped and vacinated anyway. There is rabies in Europe.
