chef,but not in the last 5 years

I'm asking this on behalf of a friend. He is a chef by trade, done all his training in the navy and holds all the relevant paperwork. But he hasn't been a chef for the last 5 years and wishes to emigrate to Australia. The company where his sister works in Perth is willing to sponser him for this. Would he need apart from his skills being assessed, would he still need the 12 months out of the last 24 working as chef. He is working as a truck driver at the moment, so that is no good i know.

so best option may be initial temporary sponsorship as chef on 457 and after 12 months work experience as Chef in Australia will then have GSM options. TRA assessemnt can then be sorted while in Australia during this 12 months.

Not for the 457 unless the case officer requests this - will need skills assessment prior to lodging GSM visa application when has 12 months of experience
