I was wondering are there any good websites that anyone has found covering
New Zealand residency, work visas, working holiday visas etc and when they
best apply? Ive tried the immigration website but its a little awkward in
terms of explaining things.

You won`t find anywhere much better than the NZIS site. Read the Guides for the category you want, if you persevere it explains things quite well.
