Hello

Section E of the EOI, where they asked you about your skilled employment, most of the question seem to be orientated around having gained this skilled employment in NZ.

However question E7 doesn't mention anything about NZ. Can I claim that I have a qualification in a future growth area for this question.

The skilled employment section E is where you state whether you have current employment in NZ or a job offer. If you have neither of these then you miss out most of the section entirely. Your work experience and current job [unless in NZ] is in the Work Experience part.
Details about your quals and whether they are on the LTSSL or in a future growth area come under the Qualification section.

So it all depends on whether you have a job offer or have worked in NZ at any point.
