Got offer about the same as I earn here 140k NZD, will sort contracts out during my first 2 months stint there.
You cannot start work without a work visa.
You cannot get a work visa without a job offer
A job offer means a full and complete job contract which details all the usual employment details.
Occupation; details of work; hours; remuneration; sick/hol pay etc.
That contract will need to be a part of the paperwork submitted when applying for a work visa.
You should not enter NZ at all with the intention of working if you do not have the appropriate visa.
You cannot do a trial period of work on a visitors visa nor do anything unpaid or otherwise.
Your way in is a full contract of employment in your hand up front.
You then apply for the work visa. Family for wife. Student for kids
You enter NZ with the visa and then and only then you may start work for the employer.

average demolition supervisor/team leader salary is between 60-80K.

However we are not certain of the occupation here. It could be Project Manager.
The word Demolition can be a bit misleading as demolition is quite specialised.

Thanks to your input I spoke with the the company doing the visas etrc yesterday, they have it all in hand and my employer is sending the contract of employment etc with the other info they need for the visa's.
They have it all in hand but it's nice to be a bit more in the know, to be fair, the reason we went to these agents is because I probably haven't got the time to do it as well as they do.
But getting info on here helps me understand where I am in the process, so bear with me if i'm not 100%

That bit is rather screwy & has caused me to lose a little faith int he process for you. Please be careful.

The visa I will going out on is a 2year one I believe (essential skills?), this is a quicker option to get me there and working, I will be there for 2 months (as I put it my first stint probably badly worded) to set things up before my family arrive, I call it that because I will go home to fetch them.
During the net few months we (me and the agent) will be making contact with the NFDC (demolition federation here) and the NZ equivalent (thanks BEVS) to gain the correct documentation to back my qualifications up for me to be able to gain the longer (skilled migrant?) visa.
The information some of you have given me has made everything a lot easier to understand and enabled me to ask the right questions of the right people to be able to explain to my family what is going on.

doyley, I do hope you have seen the offer and approved before you go ahead and agree to accept the position. you do also realise that average holiday is 20 days and some of these may be non negotiable to be taken over the Christmas shut down.
Also on an aside, have you checked the company out, do hope its not Fletchers, lots of construction companies are having a rough time with some big names losing hand over fist. Please do check them out and make sure the company is still going to be viable in say 2 yrs time.

Nice idea to come out to set things up for your family before finally starting work.
Just ask in the general BE forum about areas and rents. Schools etc . All that type of thing. People will be happy to help.
With the 2yr visa you will be easily able to ship your worldly possession. your kids will uplift student visas. Your wife will come under the family stream.
Please do ensure that you are offered the right rate of pay as the rate of pay now comes into whether someone is eligible or not to apply for a Skilled Migrant visa.
A skilled migrant visa is one that becomes indefinite leave to remain with conditions after 2 years have passed.
Please do check and double check with the immigration agent under which skilled occupation the application will go forward. This needs to be right from the outset.
I worry for those on essential work visa these days as immigration goal posts can change. Ensure you keep your NZ future safe.
