I am putting together my application and under the personal history section it asks for everything I've done for the last 10 years (or since I was 18).
In the Checklist for the Buffalo kit it asks for employment contracts (which aren't common in the US) and letters from present and past employers. Does this mean only the jobs that will count for the points (i.e. my teaching jobs) or do I have to try to get letters from every job I've held since I was 18? Any advice? Thanks.

Rule of thumb is if you cannot (that means impossible not inconvenient) get some document you should explain it and if possible provide proof, like a statement from your employer that they do not give references.
