This has been asked 10,00 times before .. A truck driver running USA and Canada do the days out of Country count against the number of days you must be in Canada over the 5 year period

Depends on the employer - time out of Canada counts as time spent inside if working abroad for a Canadian employer. So assuming it's working for a Canadian trucking company, then it's no issue.

If you travel with your Canadian spouse that counts towards your 5 years doesn't it? So you could just stick them in the refrigerated trailer with the turkeys and you would be good to go (until they murder/divorce you).
