Once, or if, I recieve approval in principle do I still need to apply for extension
of visitor status as well as employment authorization if the primary visitor status
has almnost expired?

Or is employment authorization enough?

I ask because I expect, or hope to expect, AIP within the next month but my visitor
status expires in about 2 months.

Nope, you only need one or the other. So if you apply for and receive the employment
authorization, you do not need to extend your visitor's visa.
