I sponsored my fiancee to be together in Canada. We know that in 3 months we have to
get married. Because some families problemes we cannot get married in this time. Can
we extend this time to 1 year?

Your fiancée received a conditional immigration visa - the condition is that you
will get married within 90 days from your fiancée's landing in Canada. Such
condition cannot be extended, it can only be removed by fulfilling it and applying
for the removal.

Can you get a quick civil service marriage now and then do a more formal one later?

Yes, You need to visit your local City Hall to apply for a marriage license (take 2 forms of ID ie passport/birth certificate - only one of you needs to be there) and with this, you can marry immediately (assuming you can book a register office or whatever). The license is valid for 3 months.
