EE alternatives

Due to the seemingly endless uninformed wait we are experiencing for our FSW PR application, I have been looking into any alternative routes which might move us quicker. We really have our heart set on Alberta, and since the only EE entries which seem to be ongoing are PNPs, I've been looking at AAIP. Can anyone tell me how we could be noticed to get a Notification of Interest letter? There is the possibility my NOC code could fit 3211, and a previous role was definitely 3212, but my EE profile I put best fit at the time (from job duties and description) as 2121, which is suitable under the accelerated tech pathway. My job duties have changed from since we submitted our application, so how would I/should I update my NOC somewhere? Would this trigger a NOI, or do we have to submit anything further to prove eligibility? Would it effect our original EE/FSW application?

We would also consider study permit for one of us to undertake a masters/doctorate, finance dependent, and temporary work permit to gain Canadian experience. Are their any other possibilities we can look into? Any advice or recommendations would be helpful, as we have put a lot on hold expecting an imminent move, and we don't really want to waste years getting no further forward if we can help it.
