Default Restaurant recomendations in central Paris?

Bonjour!

I am hoping than some BE members could help me out. My brother who lives in the US will shortly be visiting Paris with his American wife and would like to take her to some quality restaurants, preferably authentic French bisto type places. It has been some years since I have spend much time in Paris so I was wondering if anyone had any recommendations?

They will be staying within walking distance of the Eiffel Tower, but are happy to jump on the Metro for a good meal.

A number of years ago I used to frequently have lunch in the bistrot near la bourse. Good food, excellent service and real 'French' ambiance.

I'm sure others who are more familiar with Paris can provide additional ideas.

For an American in Paris, Le Precope could well be fascinating as it's billed as the oldest restaurant in Paris. To me this would be a better bet than some of the other tourist-trap restaurants in Monmartre.

I agree the Procope is an experience. The restaurant has existed since 1686.
It has a literary history and it has good food.
Try Google.fr and enter Le Procope for the history.
