An interesting idea from tp, but, as ET wonders, would the Commune's support ensure a working Visa? It seems to be a vicious circle, as it obviously wouldn't sponsor the OPs without seeing them personally and examining their "compétence" and business plan. A knowledge of the pertinent laws would be needed and adequate French for dealing with Administration, suppliers, customers, etc...
If the idea appeals to them, they could come over on a visitors' visa and meet the Maire-Adjoint of potentially interesting villages, in charge of such things.
On the Gîte front, they could start by googling Gîtes de France Charente, to have an idea of the competition. Others will come along to comment on whether a family of 4 can live on the income generated....
