Is there a list of places that EU citizens can "freely" migrate to?
There are 2 types of emigration. The first type is the hard one where you need to fill in forms/get visas/pass tests/get job offers/pay a lot of money/get employer sponsorship, etc. The second type is the "free" one, like if a French citizen wanted to live in Germany. Where a person can essentially drive/fly over the border and rent a house and seek work, no problem, no questions asked. I am only interested in the second one.
I found this: https://www.gov.uk/foreign-travel-ad...y-requirements
"French Guiana is an Overseas Department of France (département d’outre-mer). If your passport describes you as a British Citizen you will not need a visa to enter French Guiana."
First question: Does that mean a British Citizen can hop on a plane to French Guiana, rent a house there and seek work, without any visas/tests/bureaucratic hassle?
Second question: Are there any other places like this?
Third question: Apart from EU countries, are there any places where a British citizen can very easily migrate to? (by "very easy" I mean without all the hassle/forms/visas/tests I talked about above.)

It's never that easy!
For instance even if you were to move to Spain, although movement in the EU is allowed, you need to prove your health care and prove an income of a certain level before you can be a resident there.
The answer is, you need to choose your country and then check out the local laws and rules.

Is there a particular reason for choosing French Guiana as a destination? AFAIK you are the first to enquire about it. Some one posted about New Caledonia once, but even my French OH doesn't know much about the DOM-TOMs!

While in essence you could have free movement across borders to be able to legally reside, pay bills, work etc you have to go route one.
I would suggest option two is not necessarily a legal way to go about things.
At the very least there will always be questions asked.

You're talking about the EU's freedom of movement for workers. This only exists within the EU. French Guiana, as an overseas department of France, is treated as being within the EU. That you could go there and seek work and settle as you could do in Metropolitan France however is not necessarily a given however (although it does appear to be true in French Guiana's particular case) rather those territories usually have to opt-in to the freedom of movement agreements even if they are territories and citizens of the same EU country.
For example, those from the British Overseas Territories, such as Bermuda and the Falkland Islands, are British citizens and have the right of abode in the UK but British citizens from the UK do not automatically have the right of abode in those territories.
There are similarly agreements in place between other countries - the Trans-Tasman Agreement between Australia and New Zealand springs to mind - but outside the EU there aren't any other foreign countries where a British citizen can go without being subject to immigration controls.
You may wish to peruse this list for places outside of Europe but could potentially allow to you to enter as an EU citizen.

Hi, even if you can enter French Guiana without a visa, check on the unemployment rate there before arriving, if you need to work. In all of the French DOM-TOMs, it is higher than in Metropolitan France (which is bad enough, much higher than the UK for example). And wherever you choose, you will always have bureaucratic hassle, particularly in Francophone countries!

But Pôle emploi shows vacancies for a number of the DOM-TOM's if you are registered within the French system although we have yet to see a job that would encourage us to shift plenty of douane vacancies mind

Yes indeed. I live in a British Overseas Territory (formerly "colony") in the Caribbean. It's a very popular place to work for Brits and others, but Brits who want to come here quickly learn that the local Immigration authorities (who are fervently anti-expats-of-any-kind) cut them no slack at all.
