You can upload scanned copies of all the necessary documents. Your husband’s passport will suffice as evidence of his citizenship. All the headings are generic; you don’t need to upload something for every category as some won’t apply to your application.

But in that case, what is the purpose of the VFS appointment? I thought it was to check the original documents (presumably against the scans if one has self-lupoaded) and to pass my (foreign) passport for the visa if granted? Otherwise, why does the system generate a checklist for what to take to the VFS appointment (my checklist specifically lists to include copy of biodata page of sponsor's passport plus proof of citizenship such as a passport?
