Spousal Visa - keep passport option - Query

I am going to be applying for my wife's spousal visa in early January. I wanted to look at the 'keep my passport' option when submitting biometrics etc with VfS. I just wondered whether it would be possible with this route for her to then travel to the UK? I read elsewhere that this could negatively affect the application. She is a Canadian citizen so normally doesn't need as Visa to enter.
Also, as the VfS centre is a long way from where my wife lives, would she then have to return to the same centre to complete the process once the application is approved?

On a slightly related note, does anyone know the time window allowed between submitting the online application form and booking the VfS Biometrics? I think I read it was 30 days but can't find confirmation.
