ILR final stage - question

Hi All,
My wife (UK) and I (Aust) have been back in the UK for nearly 5 years and we have just entered the final 6 months of the ILR so am very focused on making sure our pays meet the minimum requirement of £18,600 (no kids)
My question is twofold, as our salaries are currently 27k and 24k so we more than meet the threshold, but this may change dramatically over the coming months.
Q1. If my wife leaves her job inside the next 6 months, would her payslips up till when she leaves still be taken into consideration as combined income in the previous 6 months?
Q2. Can I use 2 jobs, both part time towards my proof of income even though it would be two separate companies / payslips. One is 3 days a week pro rata at £24k, the other is 2 days a week but also pro rata at £24k, so between them I’m earning well above the threshold in my own right.
