fees - explanation
Can someone please explain the difference between the visa fees?
Fees
By post: 601 GBP
In person: 1001 GBP
I assume our application will be by post. I thought all were.
What is the in person method?

People who live in the UK (legally of course, thus with some kind of visa) can apply for an in-person appointment during which their visa application is evaluated. It can speed up the visa process for some, but others whose applications need more processing, investigating, or etc., may not find it so quick.
I had a former work-mate with a very complicated work visa situation, and she went to an in-person appointment for her ILR in order to explain and give extra evidence. Her ILR still took longer to process than if she'd mailed it in, but she got to explain some things.
To repeat the obvious, it's only possible for those who live legally in the UK at present. For those (and if there aren't too many complications, unlike my work-mate) it can be faster than applying by post.

The premium service being discussed is for those already resident in the UK who wish to extend their visa or apply for ILR. You can apply by post but that may take several months and you'll have to give up your passport. Applying in person generally means you get a decision same day although the fee is higher.

Sorry it's still not clear to me.
Once my wife applies on line from overseas which cost applies?
I have also heard about priority processing.
