Default PR - skilled worker category

Hi there. I am in the early stages of considering putting together an application for PR under the above category.

My dilemma is this - I have diplomas in hotel and catering. I also have a BA (Hons) in Business Studies and Hotel and Catering Management.

I have reasonable experience through my career which leads me to believe that I might be able to put together a case nominating either Chef or Cook as my occupation (which is on the NOC list).

My experience has been pretty solid with over 4 years experience in the last 10 years but it was long ago (ie just inside 10 years). I have little to back up the experience other than a couple of paper references and old photos.

What are the authorities likely to ask for in relation to me being able to validate this experience?
