In the same vein, anyone have any knowledge if UK smartphones (I have a Galaxy S3) work without needing anything but a sim card in Canada?

Get a 7-11 Speakout one but you have to cut down the sim card.

Prepaids expire here, if you don't use it withing a specific time frame, something like 90 days then you lose it.

We just got Telus which are terrible for data allowance. We're thinking of changing to Virgin Media. Telus runs out after one month and talk time is extra which lasts longer depending on how much you top up eg. $100 lasts for up to a year, $50 lasts for up to 3 months I think. I'm assuming you have already had your iphone unlocked?

Yes, unlocked. That sounds good if lasts for a year. Wil look at tariffs. I don't make loads of calls. More text and data

tariffs on the pre-paid's are very high...if you really don't make many calls/texts, then it's a good option....but only if local calls. long distance calls (that's most calls from anywheres in the country even) are very expensive! be warned too, if you travel to the states, huge costs involved!
