I've often wondered about their gourmet and premium ranges. Are they basically saying the stuff before was crap?

Venison in Melbourne is virtually impossible to get with most of it only for the restaurants. Goose is also virtually impossible to get in Melbourne. Tried to get one last Christmas and there was only one place in Melbourne that said they could get them in and even then they couldn't get any.

Venison and goose are things that you can get anywhere in the UK but over here it is a mission.

sausages are revolting processed crap
In Australia they are, yes. Nothing like a fresh sausage in the UK from a farmers market.

Try getting fresh, unpasteurised butter in Australia.

I think it very much depends where you are. As I have said before, it is a very big & very diverse country with huge variations. I love how the whole of Aus can't provide these things just because people cannot get them where they live!

We have at least 3 butchers, all within easy reach who make some fantastic sausages! We also have great fruit & veg all grown locally & if I want local fish, i can go & catch it myself!
That said, there is probably a huge array of things we cannot get in Cairns. I certainly was envious when I saw some of the produce at the markets on Masterchef. However, I tend to focus on what I can have, rather than what I cannot.

I'm a little worried about the lack of availability of venison and goose though. That could spoil anyone's day.

I'd be surprised if you could not get venison - deer are farmed in Australia, well they are in WA anyway.

Absolutely.

I get fresh sausages from our farmers market up here. Duck sausages, rabbit sausages, gorgeous cheeses, creme fraiche, etc etc.
