You can order "kebab in a box" for a gluten free option.

My brother used to make kebabs when he was younger - it is definitely meat that goes into them with some spices, onion, etc.

They also don't hang around for days from experience. Often the same stack doesn't last a whole shift - particularly on a Friday or Saturday night in the UK. They manage the weight of the stack before they are frozen - ranging from smaller 25lb used in the week to whopping 60lb ones for the weekend.

Of course, that is all UK experience but I would imagine the same would be true here

They change them every day here.... and it's Yiros which is sliced up lamb shoulder and absolutely nothing else. The great thing is the home made bread. They aren't folded or thin and the bread is like this.... this is a typical local Kebab, although this has chilli sauce.
