The best Steak & Kidney pie I had was at my FIL, back in Dorset, he said he add some Guniess to it, but I perfer Steak & Kidney Pudding which I dont know how to make.

jerk chicken is jamaican and hot

* 1 tbs. allspice, jamaican if you can get it
* 1 tbs. thyme
* 1 1/2 tsp. cayenne pepper
* 1 1/2 tsp. sage
* 3/4 tsp. nutmeg
* 3/4 tsp. cinnamon
* 2 tbs. salt
* 2 tbs. garlic powder
* 1 tbs. sugar
* 1/4 cup olive oil
* 1/4 cup soy sauce
* 3/4 cup white vinegar
* 1/2 cup orange juice
* 1 lime, juiced
* 1 seeded and chopped habanero pepper
* 3 green onions chopped
* 4 skinless boneless chicken breasts


Directions

1. Combine dry ingredients in bowl
2. Whisk in wet ingredients, pepper, and onion
3. Marinate chicken 1 hour or more, I marinate overnight if I can in a glass dish
4. Grill chicken until done you could barbie it serve it with rice and peas :thumbsup:

sorry I have a vine in the garden and freeze my vine leaves, I think you can buy them in Oz in the little deli type shops why don't you use vegetables instead tomatoes and capsicum peppers, courgettes and aubegines with a cinnamon spiced rice and mince mixture with a grated cheese topping

I do use vegatables, we love it, now Jerk chicken, now that is very hot, good for parties to make everybody sweat. :rofl:

um yes but they tend to eat it and either run for the water jug or blame you for a night spent on the loo :rofl:

I don't use the habanero chillis much too hot for me I make a milder version which I think is better but some of my friends say its sacrilege and I can't call it jerk chicken :rofl:

Fish and chips - flake or blue eye - coat in a flour and pat off - fry in a little oil until done. Chips - desiree potatoes cut into wedges, coat in a little olive oil and salt and back in the oven at 220c until done (about 45 minutes). Serve with peas cooked with onion and bacon or just plain boiled.

Meatballs and spaghetti - mix together 500gms of mince beef with one egg, 4 tbsp of finely grated parmesan cheese, 3 tbsp of breadcrumbs or fine semolina or matzo meal, tsp of oregano (dried is fine) a crushed glove of garlic, salt and pepper. Make into small balls and put in fridge until needed.

Sauce - 1 onion, 1 clove of garlic and 1tsp of oregano, chop in food processor until fine. Heat a little butter and oil in a large shallow pan and add onion mix, cook for about 5 minutes until soft but not brown. Add bottle of passata and half that bottle of water with salt and pepper. Cook for about 10 minutes. Add 100 mls of full milk and drop in meatballs - do not stir. Cook for about 45 minutes on a low simmer - serve with spaghetti and freshly grated parmesan.

I do those for after school meal, but for dinner if I give them they wont touch it, its not their fault they were brought up that way to have dinner every night.;)

Every other week we do spaghetti also to bound your meat ball you don’t need to put the egg in with your mince meat, you can put very small amount of Bicarbonate Soda, it does the same job, & I cook my fish very similar to yours except I put them in eggs first then on to flour, then fry them, very nice the kids just love it.:thumbsup:
