Can anybody tell me how to cook a chunk of roast in the oven and be tender? Every time i do it it comes out as tough as a old boot!

When I could afford a roastI would place it in a baking pan half filled with water, and cover with alfoil. Cook slowly for about 2 hours, replacing water as you go. You can then put it on a baking tray, and brown it slowly for about 20 minutes. Good luck

I always had that problem when doing them in the oven. Until I got a slow cooker (crock pot), now every roast I cook come out so tender it just about falls apart
I know you asked about oven, so I really can't help there.... but if you ever get a slow cooker it's so easy. Just through it in with a bit of spices on top water, some flour and beef cubes and you're all set.

go to your local greengrocers and buy a few pieces of fresh horseradish.peel and grate it,mix with some cream and mustard and you will have some lovely fresh horseradish to go with your beef..failing that use some wasabi.

I took some beef out of the oven once.my husband who is a chef told me to make sure that I left it to rest.I did as I was told and set down and had a glass of wine.ended up burning the roast potatoes.

I agree, to drop the temp and increase the cooking time. I really fancy getting a slow cooker, can anyone recommend a good one?

I am with you comet555...about the slow cooker, they are great.
You can chuck your meat and veg and a bit of stock in there, switch it on, and come home to a meal, no worries.
The meat is always so tender, it almost melts in you mouth, and my kids love it. A worthwhile investment.
The slow cooker is a Homemaker brand Model AP316A from Kmart, They were on special a couple of weeks ago. $45.00
