Perhaps it might also help that we control what goes into the bread? or is that being too naive on this bread making journey?

Has anyone tried making giant muffins? A french friend claims to do this but secretly I think he goes up to the local bakery before we wake up.
It works that way for us. One loaf is about two thirds the size of a shop bought and lasts us (a family of 4) for two days. It makes amazing toast as well.

And yes, no preservatives/e numbers

Did I read somewhere that bread is one of the many tasty things we are not really designed to eat as humans?
Thank god wine isn't on the list

Don't bother with a bread maker.

I make all my bread by hand....the old fashioned way

Only takes a few minutes and is really pretty easy.

Are those heaped or level tablespoons?

Level. My breadmaker came with the measures. Using an actual teaspoon/tablespoon could be problematic.

Another variation is to remove the skimmed milk and substitute the butter with olive oil. It rises very high with olive oil and is extra crispy ....yum

I think it's three tablespoons of olive oil, will check later and confirm
