Haven't shared a curry with any of my online friends here but another expat we know well (the OH's bosses missus) does a MEAN Chicken Tikka Masala - tastes like the real McCoy and she does a full on banquet when you get invited over - all homemade - Chicken Tikka Masala / Lamb Rogan Josh / Beef Vindaloo / 3 different rice dishes / Daal / onion bhaijis / keema naan / pappadoms / pickles / chutneys etc etc etc.... She even managed last time to perfect Chicken Dansak for me (Mild - so 'not a proper curry! LOL!!), with pineapple, mango, lentils, lemon juice...the womans a legend! |

Get hold of a copy of The Curry Secret and anyone can become a genius Indian Restaurant curry cooker. Whether Indians in India would agree is another matter;)

Re: B.E best curry maker..
were serious curry lovers and have heard its difficult to get good a Indian takeaway. I've always made my own using pataks and nazirs paste but thought if we can't get them when were in Oz were stuck, so I have been practising over the last few months with spices and bought kris dhillons secret recipie book. Absolutely brilliant but it is restaurant cooking. So I spoke with Indian colleages at work and have perfected my own curry and after testing it on other family members I've been told it's the best curry they've ever had, so if anybody wants the recipie let me know, only probem is I'm not precise with spices I just taste and see :):)

Re: B.E best curry maker..
I make a pretty mean curry. It is a Friday night thing born out of a desire to use up what is in the fridge, feeling liberated and thus creative by finishing the working week and, most importantly, the desire to earn enough brownie points to get a knee trember on Saturday morning.;)
It is a fusion of indian and chinese cooking: I fry onions, garlic and mushrooms and set to one side. I then fry chicken and re-introduce the onions, garlic and mushroom (how do you do:D). I then add white wine, a tin of tomatoes, garam masala, turmeric, chinese five spices, chili powder (or better still fresh chillis), chick peas, capsicums, salt, pepper and simmer for 30 minutes. Before serving add beef gravy granules to thicken ever so slightly (beef works somehow), remove from the heat and add a generous portion of sour cream and fresh coriander. Yum! |
