I'm feeling a bit overwhelmed by the whole prospect of moving to Brisbane and was wondering what / how those moving to Brisbane are planning to organise themselves when they get there - job first or house first? Staying where? Hotel, apartment, family! ? I'm hoping that hearing others plans will be an inspiration to me and give me a more concrete idea of where to start.

You need to have somewhere to stay when you arrive and that should be your top priority, whether it's a house, appartment or whatever.
We booked ourselves into a cheap and cheerful holiday appartment in Perth for a couple of weeks, on the basis that we would find somewhere more permanent to rent once we arrived. We found a place in a few days, so just bailed out of the appartment.
Once in our new place we tackled jobs and everything else just fell into place.
Don't stress about it, have a basic idea of what you want to do and just go with the flow when you arrive.
