Who else had a great BBQ today?
Just getting in the swing.
I prepared the fire with clippings from an old pear tree I cut last autumn, added the charcoal and about 30 minutes from setting light to it, was cooking my steaks on fast/v hot. Then on with the wife's chicken. Finally, my little bro Matt's special recipe:
Mushroom sizzles with cheesy centre
You core the mushrooms
Add a good teaspoon of cheese garlicky spread in the cored centre of the mushroom
Put on the BBQ
The mushroom is a very forgiving lad and doesn't matter whether the BBQ is red hot or fading, will still cook fine
When it is shrivelled etc and looks cooked - pop in mouth, fantastic!
Another great BBQ day in Paradise: remember this one for Aus.

Well as is common with bros, I don't concede much to mine but I have to say old Matt knows his stuff when it comes to cooking (he trained as a chef when he was younger - gave it all up for something better paid.)
Dab hand at curries, too - long live Patak's but the KNOWLEDGE helps too.

Had a few this weekend as finally fab weather, we bought a proper Oz bbq a few years back, doesn't spit the fat back up at you and set the place alight! also cooks a mean cooked brekkie for everyone who crashed round the night before..!!
