What is the best biscuit to use as a base for

Default What is the best biscuit to use as a base for

lemon merinque and cheese cake. I am going to make these this weekend for the first time in Oz. I used to use Mcvites digestive but have not seen them on the shelves. any advice from the cooks out there? Do you also get the Philadephia cream cheese here? Have not had a chance to look yet.

Yes to cheese.

Bis = Had digestives the other day and their texture would be fine.

For lemon meringue I use a regular pie pastry...Link to Crisco recipe is here, but you can use Fairy brand instead. Just make sure it's at room temperature or it will be too hard to cut. If you're going to make lemon meringue pie, prick the crust with a fork then bake at 200 for about 10-15 minutes until it's golden brown. Pour in the filling while it's still warm.

For cheesecake I use Granita biscuits that I've crushed in the blender. 1 package of biscuits plus 1/2 cup of sugar. Mix with 1/4 cup melted butter and press into the springform pan. Bake at 175 for about 10 minutes before putting the filling in.
