Top tip BBQ dish.....

.....Has anyone got some to share???? running out of ideas of what to cook driving me and then rest of the gang mad

Prawn and Scallop Skewers
1/2 cup mango chutney
1/2 cup orange juice
1/4 cup sweet and tangy barbecue sauce
8 x pineapple chunks each abt 1" square
12 lrg prawns peeled, deveined
12 lrg sea scallops
8 x cherry tomatoes
8 x pearl onions blanched, peeled
· In a food processor or blender pureechutney, orange juice, and barbecue sauce until smooth.
· Thread four 12-inch skewers in the following order; pineapple, prawn, scallop, tomato, onion, prawn, scallop, tomato, onion, prawn, scallop, pineapple.
· Brush skewers liberally with sauce and place in center of cooking grate. Grill 6 to 8 minutes or until prawns are pink and scallops are opaque, turning and brushing liberally with sauce again halfway through grilling time. Serve with remaining sauce for dipping.
· This recipe yields 4 servings.

OK here goes, the ULTIMATE barbie marinade, makes loads:
200mls Veg. oil
100mls Worcester Sauce
100mls Wine Vinegar
200mls Soy Sauce
280mls Tomato Puree
200mls Sweet Chilli sauce
7 Tbsp Dark Brown Sugar
3 Tbsp Minced Garlic
2 Tbsp Fresh Grated Ginger
Shhhh! the recipie is secret so don't tell anyone....

it isn't a meat/fish recipe but a salad to accompany.
2 heads of broccoli (sp?) chopped into small pieces
8 rashers of bacon grilled until crisp and chopped into pieces
1 cup of toasted pine nuts
1 cup of raisins/sultanas
half red onion finely chopped
Mix all these ingredients in bowl. Make dressing as follows:
3 quarters of a cup of egg mayo
1 quarter cup of sugar
1 quarter cup of white vinegar
Mix dressing and pour over ingredients and mix well. I guarantee you will be asked for the recipe by your host.

Homemade beefburgers. 1 kg of mince beef in bowl put in 1 egg to bind it together with about 50 grams of freshly grated parmesan cheese, 3 cloves of crushed garlic, 2tsp of oregano (dried is fine), salt and pepper - make into patties and bbq. (If I want it to go further I put another egg in and about 10 tbsp of fresh breadcrumbs or semolina - I also taste the mixture before making it into patties by frying a little first to see if salt etc is correct.

don't know if they eat it in OZ, but Toon will back me up, here in Holland its a big favourite.
What you need :
Chicken fillets - diced so you can put it on skewers to cook.
marinade this for a few hours in a mix of :
Soya sauce (try finding a good strong one)
garlic
chilli sauce
A little vegetable oil
Chilli puree (sambal Olek/Manis)
We also use here Boemboe sate, which is a mix of spices, but haven't got any idea what it might be called elsewhere. (not essential for the marinade)
Put the chicken blocks on the skewers, throw it on the barbie and enjoy.
Goes down well with peanut sauce, but that might be a bit harder to find over there.

Its not a recipe but here is a top tip for those using root ginger in their marinades.
When you buy a nice big peice of root ginger, the chances are you are not going to use it all and it will end up in the fridge and go off.
Well, if you peel it and pop it in the freezer, wrapped or bagged, you can then take it out and grate it as and when needed, then pop it back in the freezer for next time. Fresh Root Ginger at hand all the time.

Go to to your local South African shop & get some boerwors (farmers sausage). They are designed for bbqing, usually made from beef & lamb. They come in a coil & cook them like that, don't cut them up & then cook them & don't prick them. They are delicious, you won't be disappointed.

and mix it with a plain yoghurt
mix the lamb strips with the marinade
through it all in a plastic bag and leave overnight
screwer em up the next day and barbie
absolutely bloody delicious and so easy even a woman could make em
