Sydney on a short time scale

Sydney on a short time scale
I'm off to Sydney with work for a couple of days so I have 3 evenings/nights to kill down there. For those who live there or know it well, what's the best way to fill these and what is the 'must see' stuff?

The usual things are:
Opera House
Harbour Bridge
Darling Harbour
Botanical Gardens (watch out for the fruit bats at night)
2 hr ferry cruise around Sydney Harbour (if they are still running at that time)
Dinner at Doyles
The big tower thing
I'm sure the locals will give you a better idea!!
Oh and course the pubs

Cocktails in the bar at the top floor of the Shangri La Hotel - magnificent view. Dinner and/or drinks at Hemisphere/Establishment.

Will do the Opera House etc, not too sure how much time I'll have on an evening - depends on whether they have anything planned.

Sydney Aquarium is excellent and is open until 10pm. Not sure whether you've already got something like that where you are, but I could spend hours in the shark tunnel watching them and the rays!

Here's a possibility that jumps to mind for Sydney...
Get down to Circular Quay
Hop on the Neutral Bay ferry .
On the way, enjoy the view of the city behind, OH to your right, bridge to your left and Admiralty House & Kirribilli House in front.
Get off at the first stop, Kirribilli point, walk up the hill till you get to T junction, turn L and wander down to Johnnie Howards house (knock on the door and ask about the cricket).
Turn R and walk along the Kirribilli 'dress circle' of overpriced apartments, you'll come out opposite the OH and under the bridge.
Turn R again and head up in to Kirribilli village for a drink at the Kirribilli Hotel and a bite to eat at any of the great restaurants.
Try Garfish if you like to eat fish, and you might even see local celebrity Alf Stewart (Home & Away). He lives near by and we've seen him there twice.
Or go to Stir Crazy for some great and cheap Thai.
Wander back down to the harbour, bearing R under the bridge to the water's edge, You'll find yourself next to the a great pool and in front the grinning face of Luna Park.
Jump on any of the city bound ferries on the wharf right there(Milsons Point), first stop Circular Quay. Enjoy the city lights, don't forget to look behind you at Luna Park!
Or if you've still got life left in you, from Milsons Point you can get a ferry to Darling Harbour and wander round all the tourist attractions - Aquarium, IMAX ect.... (it's better than it sounds) and grab a few drinks.
It's a 20 minute walk back in to the city or you can get on the monorail.
