Nope, you can get a stopover with Singapore Airlines too, I was told by the agent they were the only airline to allow a stopover with double baggage allowance (40kg), but didn't ask about Cathay so maybe they do too! Singapore are very reasonable, don't need to buy a certain type of ticket just a normal one way ticket and the service is fantastic too so you won't go far wrong if you travel with them. Singapore also do great stopover deals with hotels at cheaper rates than if booked separately but you must book them at the same time as flights to get the deal, well worth it though. 
ANyone who is thinking of using Qantas - couple of little tips join their Frequent Flyer proram before you leave the UK, it's free. If you join in Aus it costs $$$. Also, if you think you will travel enough to use it, join Qantas Club, they give you an extra 10kgs on international flights then.

Air New Zealand and United Airlines offer 46kg minimum per person no matter how many stopovers you do.

Hi there we did a stopover in Singapore when we came out in October and we had the exact same response when we tried to check back in at Singapore. Regardless of whether you have booked your ticket via Singapore Direct or a travel agent I would still email Singapore airlines put all your names on the email and what visa you are entering AUstralia with and print this out (as well as the info that your travel agent has put on your tickets) as they were quite disgruntled and called over two people to check the email.
There is a place in the airport where you can leave your luggage for a small cost - we just packed one case for use in Singapore for all of us and left the rest. When you come out of the luggage retrieval turn right and just keep walking.
