I'll be arriving in Brisbane at the end of October from NZ.

Having owned my own property most of my adult life, I don't have rental references. I also don't have a job there yet and although I have set up an Australian bank account, I am yet to deposit funds or activate it.

So.... how difficult do you think it will be if I don't have Australian payslips/bank statements/references etc ?
Will my NZ bank/employment history suffice?
Is flat sharing easier to organise than renting an entire unit?

I've been looking on Gumtree etc to get an idea of prices so I can plan a budget.

Does anybody on this forum know of any rooms to rent in the CBD?

Bring as many references like bank statements etc... with you. It can only help.
