Resume Australian style
Could someone please give some guidance as to how an Australian CV is set out.

It doesn't come across too different from that of the UK..some examples can be found in the "career advice" sections of mycareer.com.au IIRC.
If seen some agency websites saying that 20 pages is too much, tone it down to 6... but by in large it appears that a CV of 2/3 pages is enough, without too much personal info (kids, married etc).
The biggest difference is that in Oz, you supply references, whilst (in my experience) in the UK, your 'new' company made contact with your old employers.

We "Prep" all out CV's before they go out to clients, generally this is just removing contact/referee details, sometimes juggling around the content if we know the client prefers them in a specific order etc.
When first vetting them I generally prefer,
Personal details
A paragraph giving an overview, key skills, competencies, experience etc (qtr page max)
Education background
Employment History (period, title, company, then details of the role)
Referees
Keep the resume plain and simple, flashy boxes, fancy fonts aren't the things that are going to get you a job I'm afraid.
I largely specialise in contract IT work, and a structure of a CV isn't overly relevant, if the keys skills we require are obvious in the CV, its largely going to come down to the personality and fit within the organisation which the client will decide upon at interview time.
In terms of who I put forward to clients, the key things i look out for when meeting or speaking with candidates are communication skills, (verbal and written), personality and enthusiasm.
We get a lot of people who simply cannot write or speak good enough English, cover pages that you read 3 or 4 times and you still cant make proper sense of it, id say nearly half the resumes we get in we couldn't even consider putting forward to our clients.
Sending them through in PDF format is another no no for us, Word is definitely best (its much easier to import them onto our database)
