Default Proof Of Employment

In a few weeks I will be submitting my application for Migration. I am also just about to start my own business. I have all pay slips from my previous employer but how do I prove I am paying myself?

I'm not sure this will be of much use to you but my partner is also self-employed but has been for 12 years. We were told for proof of employment that they wanted to see NI contributions print out for time when employed and also as self-emplyed (i.e. Class I and Class II), also a letter from Accountants (2 different ones used during last 12 years) stating that he had been self-employed from and til and that they had acted as Accountants and finally they wanted to see the last 6 years Accounts.
