We stayed for just one night (as a stopover) in Port Macquarie last year. We stayed at the Beach House Apartments. www.beachhouseholidayapartments.com
They were right near the beach so had stunning sea views.
The apartment was actually 2 storey - 3 bedrooms upstairs (2 doubles and a bunk room) and a bathroom, and downstairs there was the lounge (With TV and video), kitchen (with all facilities including washing machine) and toilet.
There is a small pool outside and a bbq area.
We paid about $170 I think for the night for all five of us (well worth it IMO).
We weren't there long enough to see much of the town part from a swim in the olympic pool in town and a meal in the Hog's Breath Cafe, but it is a beautiful place to visit.
Only drove through Coff's Harbour so couldn't tell you anything about it, sorry.
Julie.
