Each state has its own service so take a look at the services websites. NSW and Queensland Ambulance may now be scaling back on overseas recruitment.
You first need to decide which state you are interested in.
Western Australia may be recruiting qualified paramedics try this link.

It would be 45 as this is the maximum age you can apply for a work visa.

If you are interested in Victoria this site will give you most of the information you require and I guess you could contact them to see if they are recruiting from overseas. A couple of my daughter's friends are paramedics.
