You'll pay school fees here.

Just so you know to factor this into any decision you're making.

They're not free in Coffs Harbour if you're on a 457 or student visa.

I live a fair way to the South near Taree, but Coffs is familiar to me. It's about half way between Brisbane and Sydney but note: to drive to either is about the equivalent of Durham to London so it's not a day trip.
Edit: Sydney is further but about same drive time as it's all motorway South of about Kempsey. Northwards there are still big lengths of old fashioned single carriageway roads.

Weather is really excellent with mild winters and subtropical summers with generally a nice sea breeze, and there are some superb beaches North and South of the town.

Property and rentals a fair bit cheaper than capital cities. Most facilities there like supermarkets, "shopping towns" and a very nice clean green hinterland to explore.

The town itself is somewhat congested as the main A1 goes right through town through many traffic lights, the city will be bypassed within a few years but that won't help you.

Huge development boom in the 80s and 90s has left it a bit ugly and urban-sprawled in the outskirts but that's only how it strikes me personally.

I don't know anything about schools or employment, but you could do far worse than Coffs.
