We will be renting out our UK property when we move to Melbourne.

I have contacted our Mortgage insurance company to check if we can still maintain our mortgage life & critical illness cover - they assured me as long as we paid it from a UK bank account there would be no problem.

Having since had a quick read some of the small print it states that for a critical illness payout we would need to be diagnosed by a UK specialist. Can't imagine the scenario of being diagnosed in Oz then flying back to UK to be diagnosed again!!

I will obviously be giving them a call to clarify but wondered if anyone had any thoughts or experience they can share regards to this - should we consider cancelling policy and increase personal life insurance instead?

would be very surprised if they will cover non uk residents for either critical illness or life. If they say you are get it in writing, but consider whether you need this when you are living here.
You can take life assurance and lost of other types when over here,

They cannot revoke cover just because you move outside the UK unless the policy wording allows this (read it). Although the critical illness component might be impractical outside the UK.
