Default Money exchanging

We are going over to Brisbane next week to validate our visas. We have a cheque from the Queensland Treasury Corporation for A$2500:00 and want to get it cashed while we are there. What is the best way to do this?
We have an account with HSBC and have considered opening an account in Brisbane when we get there or just using the ATM card our local branch issued. Any help or advice would be welcome.
Also what is the best way to exchange our money before we get there? Should we take an amount in Dollars or travelers cheques?
