Smile Labour Agreement - Certifying Documents?

I am currently applying for PR under a LA (sub class 120). I am wondering who can certify my copied documents - it says on the Form 47ES - "copies authorised or stamped as being true copies of the originals by a person or agency recognised by the law of your country". It only states that in "Australia they must be certified by a Justice of the Peace or Commisioner for Declarations or by a person before whom a Statutory Declaration may be made". As I am applying from the UK I assume that I can use a Police Officer? Also, has anyone else applied / applying under this class of visa with any advice? Cheers
