If anyone can tell me what are the chances of finding a job as an Economist and as an Engineer (my wife), once we land in Australia.

I am an economist and before coming to OZ got a research assistant job in a
University where I worked for several months before moving to a Federal government
agency. Federal and state agencies employ a lot of economists but at this time the
fed gov requires citizenship.

Daniel,

Get a job first mate otherwise you'll get stuck. Use the web to find out if employers
are interested.
