How do you find a business to buy from overseas?
I know of Immigration specialists but how does it work?

google it!! like everything else.
type in the place you want to look for, and also business for sale.
But do the search in google.com.au

Just be very aware that the standards of financial disclosure over here are no where near as rigid as back in the UK. There's no compulsory filing of accounts to a public body like Companies House so you can't get an historical look at something that has been certified by an accountant. And it seems almost de rigeur for people to wildly exaggerate their financials hoping that some mug will just write the cheque...
